Amys Christmas Monster Cookies

Now you might think that Monster Cookies should be posted around Halloween time, but you would have the wrong idea. They are called Monster Breakfast Cookies. They are huge. You use an ice cream scoop to make them. Oh and the recipe, well its Monster huge too. But you can half it, and then half it again. I suppose someone thought it was cute to call them breakfast cookies because it has oatmeal, eggs, and other good things like vanilla and peanut butter in them.
At this point I look at the recipe and think if you want to add regular size chocolate chips or even butter scotch flavored one that would be OK. If you half the recipe its much easier to stir. I tell you this: you need a big big wooden spoon, a huge bowl and lots of friends to come over for stirring and scooping. I make the dough, put it in the refrigerator and hubby bakes off a few at a time. I only make them once a year, but they are worth it. So here is the recipe. I promise you they are fantastic. You can make them smaller using a smaller scoop, but they will come out crunchier and I like the mega size of them.

MONSTER BREAKFAST COOKIES

1 pound of margarine
1 dozen eggs
2 pounds of brown sugar, this equals to one full box
4 cups of white sugar
3  teaspoons of vanilla
3 pounds of peanut butter (5 cups)
8 teaspoons of baking soda
18 cups of quick oatmeal (I use regular, its fine)
1/2 pound of M & M candies
1 bag of mini chocolate chips

Preheat oven to 350 degree (Fahrenheit), Cream the first five ingredients (this is where the friends come in handy) Stir in peanut butter, baking soda, oatmeal, M & M's, and Chocolate chips. (if you have carpel tunnel syndrome or recently sprained your wrist, hand off the stirring now) Mix up well. Dip with an ice cream scoop and bake on a greased cookies sheet for about 15 minutes. (you want them soft in the middle but not undercooked)
